Everyone in favor of eating cookie dough straight out of the bowl, raise your hand (*cue 99 percent of people raising their hands*). I love taking delicious treats and making them a lot healthier, and these Healthy Cookie Dough Truffles not only accomplish that, but they’re also quite a bit fancier than eating raw cookie dough with a spoon (not that there’s anything wrong with that!!).
Luckily, though, they’re not any more difficult, especially compared to homemade cookie dough—I’d argue these are wayyy more easy to make than your typical homemade cookie dough (though, I actually have a speedy, healthy version of that, too!). The base of these just calls for five ingredients:
- 1/4 cup almond or cashew butter
- 1/2 teaspoon vanilla extract
- 2 tablespoons maple syrup or honey
- 1/4 cup almond or oat flour
- Big pinch of fine grain sea salt
And that brings us to the best part about these Healthy Cookie Dough Truffles—they’re super customizable! I’ve made a few DELICIOUS (if I do say so myself) flavor profiles below, but you can totally make up your own if you want (just make sure to tag me on Insta—I’d love to see what you come up with!).
To make these, you just mix together all the base ingredients and add whatever mix in you want (1 set of mix-ins per base batch). Roll into marble sized balls (if batter is too wet, add a bit more oat or almond flour at a time until it’s rollable).
Then, melt a half cup of dark chocolate and dunk balls in, shaking off any excess. Top with any desired toppings, let set in the fridge, and enjoy!
I intentionally made each recipe fairly small—about 12 bite-size truffles—so that you could make a few batches and have lots of different truffles to eat or gift (one of the best parts of receiving a box of chocolates is getting to bite into each and get a new surprise!!). Strawberry Cardamom
To make super-fancy-yet-easy Strawberry Cardamom Healthy Cookie Dough Truffles, just add the following to the base:
- 1 tablespoon powdered, freeze-dried strawberries (I just blended my freeze-dried strawberries on high to crush them)
- 1/4 teaspoon cardamom
I like to top these with a bit more strawberry powder, which makes them look extra pretty. They’re perfect for gifting—especially for holidays like Valentines/Galentines Day or Mother’s Day—or just eating, of course!
Lavender Cinnamon
Another great option for Valentines Day or Mothers Day, these Lavender Cinnamon Healthy Cookie Dough Truffles taste so gourmet, and all you have to do is add two more ingredients:
- 2 teaspoons powdered, dried culinary lavender (I just blended my lavender on high)
- 1/2 teaspoon cinnamon
Top with a bit of lavender and some flaky sea salt for that extra wow factor!
Chocolate Chip
Nothing’s wrong with a classic, especially when that classic is Chocolate Chip Cookie Dough Truffles. To make these, just add:
- 2 tablespoons chopped dark chocolate
Brownie Batter
Another soooo-good, easy option? Brownie Batter Cookie Dough Truffles. They’re super rich, but in a good way, ya know? Just add:
- 1 tablespoon raw cacao
