Pizza night, we meet again. If you’ve been part of my Instagram community for a while, you know that I’m a big proponent of self care. Most times, my self care involves chilling out, relaxing with Zack and Bella, and not spending hours cooking and then cleaning up from dinner. Instead of succumbing to unhealthy take out, we make this nutritious 5 Minute Enchilada Tortilla Pizza.
Oh boy, this pizza!! It has a thin and crispy crust made from grain free or spelt tortillas and is so delicious. It tastes just like enchiladas, without the sweat and tears of actually stuffing and rolling 12 enchiladas. This recipe is one of Zack and I’s favorite quick weeknight dinners. One of the reasons we love this tortilla pizza recipe so much is because it’s fast, healthy and we usually always have the ingredients on hand. This healthy pizza is an enchilada version of the fan-favorite Crispy Cast-Iron Tortilla Pizza in my Healthier Together Cookbook, which is classic Italian style.
This is the best pizza recipe for fast weeknight dinners and for healthy kid-friendly dinner ideas and after-school snack. Make it a fun thing to do with your kids by letting them pick and add their toppings!
What’s in this enchilada tortilla pizza?
This healthy pizza recipe is made with ingredients you probably already have in your pantry and fridge. And, if you don’t have everything on this list, get creative with whatever toppings you do have on hand! Just sear a big tortilla in a skillet, smear it with enchilada sauce, top with cheese, black beans, and spices, then bake in the oven until the cheese gets bubbly. Sprinkle it with chopped red onion, cilantro, and avocado chunks, and eat up! So simple, right?
Here’s all the ingredients you’ll need to make it:
- Burrito-sized tortillas (I like Siete Foods‘ and Rudi’s Bakery Spelt tortillas)
- Red enchilada sauce (I like Siete or Whole Foods brand)
- Shredded cheese (I like pasture-raised Monterey jack or mozzarella, feel free to use plant based)
- A can of black beans
- Red onion
- Fresh cilantro
- Avocado
- Lime
- Avocado oil
- Fine grain sea salt
- Onion powder
- Garlic powder

Add more protein: feel free to add shredded rotisserie chicken tossed with enchilada sauce, pepperoni, or plant based meatless crumbles.
Have fun with toppings: crushed chili flakes, scallions, and roasted veggies like red onion, tomato slices, bell pepper, and corn would all be delicious. Just don’t pack on too many, which could make the tortilla fall apart.
Mix up the cheese: use a combination of pepper jack, parmesan, or cheddar – whatever cheeses you love on your pizza or enchiladas!
Make it dairy free: use your favorite dairy free/vegan shredded cheese
Make it even more budget friendly: If you’re looking to make this healthy pizza recipe as budget friendly as possible, feel free to pick tortillas made from whole wheat, flour, or corn as opposed to grain free which can be pricey.
How to make the best enchilada tortilla pizza
This recipe makes 1 personal size tortilla pizza. To double or triple the recipe to enjoy with your family, simply repeat the steps.
- Preheat your oven to 425 F. Drizzle a bit of avocado oil in a 10-inch cast-iron skillet and warm over medium-high heat. Place your tortilla in the pan. Reduce the heat to medium and cook it for one minute on this side. Flip the tortilla and cook it for one more minute while you add the enchilada sauce on top of the tortilla, spreading it all the way to the edge.
- Remove the pan from the heat and add a layer of shredded cheese. Then, sprinkle black beans on top with a pinch of salt and a good shake of onion powder and garlic powder.
- Transfer the pan to the oven and bake for 2 to 4 minutes, until the edges of the tortilla are golden brown.
- Place the pan back on the burner on medium heat, and cook for another one to two minutes, until the bottom is starting to brown (be careful not to let it burn!)
- Transfer the tortilla pizza to a large plate and let it cool slightly (it’ll crisp as it cools!). Add your toppings (cilantro, red onion, and avocado). Then finish with a squeeze of lime, and enjoy!
